Hardy, wild and free – the perfect Cornish chicken…

We began with a trial of four different breeds. We wanted to find the breed that produced the tastiest meat – and it had to be able to withstand the Cornish elements. We chose a slow-growing variety which is robust enough to be truly free-range in our Cornish coastal fields.

As they roam, they supplement their feed with all the tasty grubs they can find, as well as herbs and the lush Cornish grass. This gives their skin that lovely, warm yellowish colour, and the flesh has a rich, slightly gamey flavour that you don’t get with a more constrained chicken.
